I think I’ve been in Mexico long enough to have my own mango salsa recipe and this is it. Late spring is mango season here, which means it’s cheaper (and better tasting) mangoes for people everywhere. Plus it’s Cinco de Mayo, which seems more like a US holiday than Mexican but either way it’s a celebration!
I’ve added a big kick of cayenne pepper for flavor and function. The active ingredient capsaicin is said to help cancer prevention particularly prostate and a 1tsp serving is a great source of vitamin A.
Cinco de Mango Salsa Recipe
Makes about 2 Cups
1 Medium Mango
½ Large Cucumber
1tb Finely Chopped Cayenne Peppers
½ Large Red Onion
1 Medium Lime Juiced
1/3c Roughly Cut Cilantro
Salt and Pepper to taste
1. Combine all ingredients, mix well. For a saucier mix: Blend ¼ of the mixture till liquid, add to mixture and coat well
Keeps for 4 days
